Dr. Jeffrey Go is a dentist by profession with a talent for entrepreneurship and a great love for music and pork ribs. Combining his passions into one venture, he created Morganfield’s, named after Larry “Mud” Morganfield, an American blues singer.

The first branch ever was in Kuala Lumpur, which was then followed by seven more branches around Malaysia. Morganfield’s then opened branches in Shanghai and Singapore.

Continued expansion has now brought them to the Philippines. Morganfield’s just recently opened their first branch in the country in Uptown Place Mall in BGC.

When you’re about to bite into Morganfield’s tender ribs, know that you’re very special because their pork is flown in all the way from Spain! Their baby back ribs and spare ribs are cut from Iberian pigs, a rare breed of pigs that can only be found in Spain that are fed on a strict diet – acorns only.

What makes Iberian pigs special is their genetic ability to store fat in their muscle tissue, making them melt-in-your-mouth soft and irresistible. Aside from the tenderness, their acorn diet provides a rich and nutty flavor. But the best part is (listen up all you health nuts), they generate a high percentage of monounsaturated fat in their meat which is actually good for us!

Big and juicy ribs that are bang for the buck

Big doesn’t even begin to describe the monstrosity of Morganfield’s ribs. More fitting adjectives for them would be colossal, jaw-dropping, and slightly intimidating! They are, after all, prepared in portions that are meant to cater to American appetites. This is one place that you don’t want to dine alone.

We took a measuring tape to see exactly how long their signature full slab spare ribs are and they’re a whopping thirteen inches long and almost eight inches wide. That’s about the size of a MacBook! Not to mention every order weighs in at around 1 to 1.2 kilograms (2.2 – 2.6lbs). You’re gonna need every inch of your belly space to fit it all in!

If you’re feeling extra confident about your eating skills, order up a sharing platter! Their Ribs Sampl3r gives you three half slabs of spare ribs in flavors of your choice plus a Footlong Farmer’s Bratwurst sausage, a Spicy Devil sausage, a Herby Hog sausage, a side of garden salad, corn on the cob, cornbread, and crispy french fries! But what good are enormous ribs if they’re not tender and flavorful? Not to worry, you’re not going to be chewing on rubbery, bland pork here. Their ribs are marinated overnight with a secret dry rub that seeps into the meat to give it an exciting pop of flavor. They are then slow-cooked and smoked in coal and hickory wood for three to four hours, which allows us to effortlessly sink our incisors into them. To finish them off, they’re basted with a thick and gooey sweet and sour mopping sauce, hence the name Sticky Bones!

You get to choose from four variants of Sticky Bones Spare Ribs, namely the Hickory BBQ Spare Ribs (₱1,395), the Garlicky BBQ Spare Ribs (₱1,395), the Spicy Asian BBQ Spare Ribs (₱1,395), and the Smoked Peppercorn Spare Ribs (₱1,595). So far, it’s the spicy Smoked Peppercorn that’s winning over the taste buds of their Filipino customers!
